Gluten Free Flourless Pumpkin Bread With Oats Recipe

This flourless pumpkin bread is a healthy fall treat with no refined sugar or flour.  It’s so yummy, your family will never know it’s a healthier gluten free pumpkin bread recipe.  This also makes delicious pumpkin muffins without flour.


I'm not sure what my favorite part of fall is. The crisp air, the changing leaves, or the pumpkin? I love pumpkins for both decorating and eating.


We grow pumpkins every year, and I roast them, puree them, and freeze them to use in my pumpkin recipes like this pumpkin bread with oats.





I like this recipe because it doesn't have flour or white sugar, yet it has a great texture and flavor. I promise you that you won't even miss the flour or sugar in this delicious gluten free pumpkin bread recipe.


This pumpkin bread no flour is very easy to make, too.  You make it all in a blender, so there's very little mess to clean up.


My flourless pumpkin bread with oats freezes well, so make a few batches and have extras for later.


Flourless Pumpkin Bread Recipe


I like this pumpkin bread with oats because it's so quick and easy to make, and I don't have to dirty a lot of dishes to make it. It doesn't have flour, but you'd never know it after you bake it because it has the same texture as a quick bread.


My no flour pumpkin bread uses real maple syrup to sweeten it, which gives it a mildly sweet maple flavor that complements the pumpkin pie spice. This isn't a really sweet dessert, but the pumpkin and the pumpkin spice flavors take center stage.

Why is my Pumpkin Bread Dry?


Pumpkin bread can get dry if there’s too much flour.  Since this is a flourless pumpkin bread, it’s naturally a moist recipe.


A gluten free pumpkin bread recipe can also get dry if you cook it at a high temperature.


What Goes Good in Pumpkin Bread?


This is a basic pumpkin bread no flour.  You can also add chocolate chips, white chocolate chips, cocoa nibs, or nuts.  Add ⅔ cup of either of these to customize your pumpkin bread with oats.


How Do You Know When Pumpkin Bread is Done?


Since this no flour pumpkin bread bakes a little differently than traditional recipes, it can be tricky to know when it’s done.  


Insert a knife or a toothpick in the center.  When it comes out clean, your gluten free pumpkin bread recipe is done.




Does Pumpkin Bread Freeze Well?


Yes, this flourless pumpkin bread freezes very well.  Let it cool completely and wrap in plastic wrap (I use compostable plastic wrap).  Then place in a freeze bag and freeze for up to three months.  Reusable freezer bags are perfect for breads.


How to Make Pumpkin Bread With Oats


Oats make a great substitute for flour in baking.  They are gluten free and have more health benefits, so I prefer to use them.


The first time I made this, I was worried that it would be too dense using oatmeal, but it wasn't.  It's not light and fluffy, but it does have a great texture.


You can use quick cooking oats or old fashioned oats.  I used quick cooking.


Quick cooking oats are smaller, so they cook faster.  They make a lighter and more delicate texture in baked goods.


I haven't tried this with steel cut oats.  I think they make it too dense, so I'm not planning on trying them.





Pumpkin Puree for No Flour Pumpkin Bread


I used my homemade pumpkin puree from pumpkin from my garden.  Making pumpkin puree is truly a labor of love.  It does taste amazing in baked goods though, so I do it every other year and freeze it.

Of course, canned pumpkin will also work.  I do try to get organic pumpkin when I can if I have to buy some.  I think it has a better flavor than regular pumpkin puree.


Pumpkin Bread No Flour Sweetener


This healthy pumpkin bread recipe has no sugar.  I used maple syrup to sweeten it instead.  The maple and pumpkin and spices combine to make a delicate flavor that's perfect for fall.


I suppose you could use honey, but that's a lot of honey.  I buy local raw honey, and it's not cheap.  You could also use part honey and part maple syrup.


Pumpkin Pie Spice 


Since this is a simple recipe, the pumpkin spice is really what flavors this flourless pumpkin bread.  I recommend using quality spices.  I get my spices from Mountain Rose Herbs.

Pumpkin Bread With Oats Ingredients


To make this pumpkin bread no flour, you will need:


  • Quick cooking oats
  • Pumpkin puree (not pumpkin pie filling)
  • Real maple syrup
  • Eggs
  • Baking soda
  • Pumpkin pie spice


Flourless Pumpkin Bread Directions


Step #1


Preheat oven to 350 degrees. Grease a loaf pan and set aside.


Step #2


All all of the ingredients to a blender. Puree until smooth.





Step #3


Pour healthy pumpkin bread recipe batter into the pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
