I have two picky eaters. I am fully prepared to plan a gourmet chicken tender meal for my oldest son's wedding. My younger son will most likely have chicken nuggets at his, probably catered from Chick Fil A.
For the first few years of their lives, they ate great. They didn't get any added sugar or salt, and I did everything right as far as their eating. I made their baby foods, I cooked from scratch, and they had plenty of opportunity to try new foods.
Then it all changed. When David was 7, he would eat seven different foods, all of them soft and full of carbs. We did swallow studies and tests, blood work, therapies, and everything we could think of with limited success.
Kids with autism who have feeding issues won't "eat when they are hungry" or "grow out of it." We tried not offering him extra foods per the doctor's advice.
On day 3 of no food at all, I couldn't do it anymore. They will literally starve themselves if they don't like the taste or texture of the food.
So I became the master of sneaking in nutrition where I could. Mind you, this was before all of those books about sneaking veggies into your kid's food. I was a trendsetter and didn't know it.
This was a kid who would spit out any peanut butter other than Jif, even if I put another brand inside the Jif container. He could tell what brand of nuggets I was making based on scent alone.
Nothing got past this kid. I had to learn how to add fruits and veggies into his diet very discretely. I also had to get sneaky with my choice of flours and sugars.
Luckily, he would eat bread. Breads are the easiest things to make to sneak in extra veggies and fruits.
HEALTHY BANANA BREAD RECIPE WITH NO SUGAR
This healthy banana bread recipe is made with white whole wheat flour and no sugar. The mashed bananas means the recipe doesn't need oil. It does have butter in it, but I don't freak out too much about a little butter.
SUGAR SUBSTITUTE
Normally, I use coconut sugar in my baking as a sugar alternative. It still has calories, but it has a lower glycemic index than white sugar does. It doesn't taste bitter like sugar substitutes, and there's no aftertaste in this healthy banana bread recipe.
I have had problems with it dissolving in cereal or coffee, but it seems to work well in baked goods or hot drinks.
You can also use Splenda for baking. I don't usually use it, but I'm making some goodies to freeze for my diabetic mother after she has surgery later this month.
Sometimes quick breads won't rise as much if you use Splenda. You can use an 8 or 9 inch round pan to get a better rise for this healthy banana bread recipe. You can also add 1/2 cup dry milk powder and 1/2 teaspoon baking powder per cup of Splenda if you want a better rise.
You can also add 1-2 tablespoons of honey when using Splenda for baking for better flavor. I did not add it because I wanted it sugar free for my mom.
Check this at 45 minutes if using Splenda because it can cook quicker. It also won't get as brown with Splenda, so don't go by the color for doneness.
WHITE WHOLE WHEAT FLOUR
I used to substitute about half wheat flour for white flour. I found that any more wouldn't give me a good texture, and the kids wouldn't eat it.
White whole wheat flour is made with a different kind of wheat, the hard white spring wheat. Like wheat, it's made by grinding the bran, endosperm, and germ.
It's pale and has a milder taste, so it's a great substitute for white flour, especially for my picky eaters. It's still has a little stronger flavor, but it works well in quick breads like this healthy banana bread recipe.
